Tasty Tomato And Cucumber Salad With Feta.

During the summer months our garden is usually laden with an assortment of juicy tomatoes, so when I came across these heirloom cherry sized tomatoes in the market, I knew a couple packages had to come home with me. Coincidentally a few days before I had an email request for a salad recipe.. it’s been a long winter here in Ontario and I think the emailer was looking for something light, tasty and to brighten up her day. During the winter months we tend to eat heavier meals (comfort food) so it’s always refreshing to have something light, but tasty!

The heirloom tomatoes were bursting with flavor.. I had some sliced and topped with sea salt and fresh ground black pepper.. with toast! I’m addicted to tomatoes!

 

For this tomato and cucumber salad you’ll need….
4 cups cherry tomatoes
1 cucumber
1/2 red onion
1 scallion
black pepper /sea salt
1-2 tablespoons olive oil
juice of 1 lemon (optional)
3 tablespoons feta (crumbled)
1 bird’s eye pepper
1 clove garlic (optional)

This is also a lovely salad to include in your summer time BBQ event and bear in mind that if you’re taking it to a friends house, don’t add the olive oil /lemon juice combo until minutes before serving. This way it won’t go soggy on you and ruin the texture and overall flavor.

* The bird’s eye pepper is optional, but once you remove the seeds and dice it finely the slight hint of heat you’ll get with every forkful will add a little extra excitement to your meal.

* To prevent the avocado from going discolored squeeze some lemon juice over it.
