Simple Sausage and Peppers Pasta Sauce Recipe.
If you’re looking for a spectacular, simple and relatively quick homemade pasta sauce, I’ve got you covered with this recipe. Perfect for those weekday nights when you want a comforting meal, but you don’t want to spend too much time in the kitchen. Fellas, this one can certainly gain you points with your special someone. The most time consuming part is browning the sausages, so nuff time to Netflix and chill after.
Ingredients.
1 lb Spicy Sausage (I used piccolo)
1 tablespoon olive oil
1 large can pasta sauce (your fav)
1 tablespoon tomato puree concentrate
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon pepper flakes
1 bell pepper diced (any color)
5 cloves garlic
1 large onion
1 tablespoon brown sugar
1/2 teaspoon salt
1 tablespoon chopped parsley
Parmesan cheese
Romano cheese
Notes: You can use turkey sausage (any sausage you like) and you can certainly use some of your fav red wine to deglaze the pan after frying the sausages and to add some additional flavor to the completed sauce. Use as much cheese as you like – your preference.
- Fry the sausages in the same pot you’ll be making the finished sauce (low heat). I used a deep pot to prevent any spills from getting onto the stove top. Use a little water to help cook through and cover the pot for the first few minutes. Then remove the lid and turn up the heat to brown.
- Remove the sausages and set aside. Now add the diced onions and garlic and cook on very low heat for 3-5 minutes.
- Go in with the tomato paste and stir well. This will help the tomato paste to go sweet and help build some color.
- Add the spices, salt, pepper flakes and diced bell pepper – cook for another 3 minutes.
- Cut the cooked sausages into bite size pieces and add to the pot.. add any juices which may have accumulated.
- Add a can of your favorite pre-made pasta sauce, stir well and bring to a boil (turn up the heat).
- Add the brown sugar and simmer for 5 minutes.
- Add the grated Roman and Parmesan cheeses and top with the chopped parsley.
- Boil your fav pasta, toss in the sauce and serve.
- Do taste near the end and adjust the salt to your liking.
