How To Make Candied Bacon.
I allowed the dust to settle before I decided to share this recipe for making candied bacon (pappy show as we say in the Caribbean). Over the last few years, just about everyone was talking/enjoying candied bacon and I’m not one to get caught up in HYPE! We’ve been enjoying a spicy version of candied bacon for a while now so I fully understand the sort of cult-like following of the bacon candy!
This is SO simple you’ll kick yourself for not making it sooner or paying high prices for it (if you’ve ever purchased it).
Ingredients.
1 package thick sliced bacon
1/2 cup brown sugar
1/4 teaspoon black pepper (optional)
1/4 teaspoon Pimenton (Smoked hot paprika)
NOTE: Additionally you can add 1-2 tablespoons maple syrup in the mix.
- Remove the bacon from the package and place the pieces in a bowl. Add the other ingredients and toss well. I used my hands to make sure that all the pieces of bacon were coated.
- Preheat your oven to 350F
- Line your baking sheet with parchment paper (use a wire rack if you have one)
- Place the pieces of bacon in a single row – don’t allow them to overlap.
- You can top with a bit more brown sugar if you wish
- Place on the middle rack in the oven for 25-30 mins
- Leave longer or turn on the broil setting (for 2-4 mins) if you want the pieces of candied bacon more crisp
- You can certainly flip half way though, but I usually don’t.

To add another layer of flavor, chop some Caribbean Sunshine (Scotch Bonnet pepper) finely and mix with the bacon and other ingredients. The SPICY kick, along with the sweet and salty will do your taste buds wonders! Pepper flakes or Cayenne works just as well.
