Super Bowl Chicken Chili.
If you’re looking for a quick, simple and TASTY chicken chili recipe for your Super Bowl party, I’ve got you covered. I’m as huge a San Francisco 49ers fan as you’d ever find and though we’re in the basement this year, I’m just as huge a fan of the game itself. It’s also a bonus that I’ve been a Peyton fan since his days with the Colts and I love the way the Panthers are playing this year under Cam’s leadership at the QB position.
This chicken chili will definitely allow you to shine more than the stars they have entertain us at halftime and it’s one of those dishes you can get going and leave to do its own thing as it slowly simmers away.
Ingredients
4 chicken thighs
1.5 tablespoon olive oil
1/4 teaspoon black pepper
Pinch salt (season chicken)
1 small can white kidney beans
1 small can black beans
2 tablespoon tomato paste
2 cans fire roasted tomatoes
1 tablespoon brown sugar
1/4 teaspoon salt (adjust later)
2 stalks celery
1/2 red bell pepper
1/2 yellow bell pepper
1 large onion
4 cloves garlic
2 tablespoon cilantro
1 large carrot
1 cup beer
1 quart white mushrooms
2 birds eye pepper (any spicy pepper you like)
1 package chili powder mix
Season the chicken thighs with salt + black pepper and cook in the heated oil in a deep pot until cooked all the way though (med/low heat). About 12-15 minutes depending on the size, remember to flip.
- Remove the cooked chicken and set aside to cool – remove most of the fat in the pot (leave back about 1.5 tablespoon)
- On a low heat add the diced onion and garlic and cook for about 3 mins
- Heat still on low, go in with the diced celery and bell pepper – cook for 2-3 minutes
- Now go in with the premixed chili powder and mix well – heat still on low, cook another 3 minutes
- Add the mushrooms (cut in half if they are large) as well as the diced carrots. mix well.
- Now add all the other ingredients, turn up the heat and bring to a boil (lid on).
- The chicken should be cool now – remove the skin and bones (discard) and cube the cooked chicken.
- As the pot comes to a boil, add the chicken, stir well, turn the heat down to a gentle simmer and allow to cook for 1.5 to 2 hrs
- I didn’t add any further salt as I find that salt from the seasoned chicken and what is contained in the canned tomato and beans + the packaged chili spice blend may also have sodium – is enough salt for me. But taste near the end and adjust to your own liking
Feel free to leave out the bird’s eye pepper or simply use your favorite spicy pepper. You can start this on the stove top and finish in your slow cooker (cook longer) and it’s ok to make this a few days in advance, store in the fridge and reheat on the day of the game. I usually make a big batch and put into smaller freezer containers in the freezer for when I want my chili fix!

Will definitely be making this however I am unable to have mushrooms so I will have to leave that one out. Yum. I am going for the panthers .
