As I live in the Caribbean myself (on beautiful Nature Island Dominica), I especially like the choice of ingredients for the dry rub. Most of it is growing in my back yard and the rest is otherwise easily available.

The chicken turned out nicely there. I like that all of these ingredients could be found in St. Vincent. I don’t eat pork, so baked chicken and turkey will be prepared in my kitchen for the Christmas season. I intend to try this recipe and hope it turns out as well as yours. Thanks for sharing.
I love the brown sugar ingredient it gives the chicken a great color..
I think the thyme, lemon, scallions in the cavity is pretty traditional; the ginger is definitely a Caribbean touch. The allspice, cinnamon, and nutmeg – very Trini blend, though I also associate those flavors with a Moroccan spiced chicken.
One of my favorite holiday recipes is a good macaroni pie.

I thought the chilli and ginger was a fab touch to the chicken…I used the recipe but baked mines in a baking bag then left in outside the bag for half hr……it was fantastic with pelau and potato salad.

I didn`t happen to see, in your video, exactly what you do with the peppers. I am assuming they went into the cavity of the bird as whole peppers. Perhaps you might share with us exactly what happens with them.

I love a good bake chicken recipe the rum reminds me of a jerk chicken rub. I normally flip my chicken over half way in to the cookin and the flip back a few min before done it turns out great I find that what ever fat from the back make the breast meat stay moist when done. My family makes bake ham with Cornish hens for Christmas and potato stuffing island style, pastelle, bake Mac and cheese , and don’t for get coconut and guava tarts and maybe a black cake

The chicken looks very sumptuous! For a newly wedded person and with a busy lifestyle, it can be a time effective meal..can use the chicken in various dishes all week. Also, appears so simple to prepare. Love the spices..I like a mixture of the dry and fresh ingredients.
I love everything about this recipe. The spices you used are frequented in my own recipe’s. I also use most of the ingredients here to make my own Jerk sauce. After watching this video I thought about making some jerking chicken for christmas.

Hi Chris the dry rub on the chicken uses simple ingredients and nothing that would be to hard to find in grocery stores. Also the ingredients used for the stuffing are things I like. It’s a nice mixture and looks simple to make . I would use that recipe on Cornish hens.

Love the dry rub. I’m going to try it the day before Christmas eve, since it’s not hard to prepare and I have all the ingredients. I’ve tried this before but using a different dry rub and no “stuffing.” This recipe looks interesting to try though.
I normally do pot roast chicken love your spin on it, looking forward trying your way, i know the colour of the chicken will go down well with my family, they don’t like light colour looking chicken,
I like the choice of ingredients for the dry rub and the nice golden colour of the chicken hen it was finished cooking.
Love the simplicity and flavours of this recipe. Roasted some potatoes (with the same seasoning with it. Its great!
i love that the ingredients are simple yet powerfull enough to give the chicken great flavour and the simple easy to make dry rub tht was used to season the chicken.. ginger really brings out the flavour in alot of dishes.
