Simple Braised Beef Short Ribs.

Here’s one of those comforting type dishes you and your family will enjoy on a cold Winter night. Beef short ribs braised in a rich gravy, until they are fall off the bone tender and perfect for a heaping serving of garlic mashed potatoes (I had it with cheesy mashed cassava) or a side dish of your choice. I started this dish on the stove top then allowed it to braise slowly in a 375 F oven. but you can cook it completely on the stove in a Dutch oven or in your slow cooker.

Ingredients.

3 lbs beef short ribs
1/4 teaspoon salt
1/4 teaspoon black pepper
1 table spoon veg oil
3 cloves garlic
1/4 teaspoon pepper flakes
3 sprigs thyme
10-15 pearl onions
3 allspice berries
1 teaspoon all-purpose flour
1 tablespoon tomato puree concentrate
1 cup red wine
1 large carrot
2 cups beef stock (enough to cover the ribs in the oven)
1 tablespoon parsley

  • heat the veg oil (on a medium flame) in a wide pan and brown the pieces of beef ribs (seasoned with the salt and black pepper)
  • remove the browned ribs (about 5-10 mins) and set aside
  • heat now on low and go in with the garlic (smashed or chopped finely), pepper flakes and  pearl onions and cook gently for 3-4 minutes
  • now add the allspice berries and flour.. stir well to cook off the raw taste of the flour
  • 3-4 minutes later add the tomato concentrate and stir for a minute or two
  • deglaze the pan with the red wine
  • add carrot pieces and add back the browned ribs and stir well.
  • turn heat to high, add the beef stock and bring to a boil
  • preheat your oven to 375 F
  • as the ribs comes to a boil, transfer it to an oven proof dish.. cover with tin foil and place on the middle rack in your oven
  • bake off for 2 hours +.. until tender
  • taste for salt, adjust and top with the chopped parsley
  • if you find that the gravy is a bit too thin or the beef didn’t develop that rich (oven roasted color) you can turn on the broil setting in your oven for a few minutes

Fall off the bone tender and quite honestly one of the best tasting beef gravy you’ll ever enjoy! Warm, tender and VERY comforting on a cold night as I mentioned above.
