Behind The Scenes At CTV’s Canada AM Christmas Special With Chris De La Rosa.

This morning I had the opportunity to once again showcase the delightful culinary offerings of the Caribbean on National tv here in Canada. The theme the entire week on Canada AM was the holiday traditions (food) around the world, with representations from Germany, Greece, China, UK and of course.. the Caribbean.

Here are some of the behind the scenes shots I took before going on camera…

 

We started off with a quick demo on making a traditional Guyanese Pepperpot with it’s lovely casareep base, a tasty meat stew which is a huge part of Christmas celebrations in Guyana. Then we went on to speak a bit about the drinks enjoyed during the holiday season throughout the Caribbean. Mauby, rum punch, sorrel, Ponche-de-Creme and classic home made ginger beer. After which it was on to some of the baked treats we’d expect to engage in as we visit family and friends during the Christmas season on the islands. Currants roll, Caribbean fruit (rum) cake, Jamaican spice bun, rock buns (coconut drops), red coconut tart and pineapple tarts.
